Whats for Dinner?

I love food. I love to eat good food. I am also a most of the time vegetarian (except say Thanksgiving and Christmas, and the occasional salmon, and Chicken Frontega Sandwich from Panera, but other then that I am completely vegetarian). So "good" and "food" don't always go hand in hand. So I have decided that once a week I am going to try a new recipe and share it with ya'll. Sometimes it'll be really healthy and sometimes not so much. Sometimes it'll be vegan and sometimes not. Sometimes it'll be yummy and probably sometimes it'll be disgusting. Well hopefully those times will be few and far between.
When I was growing up my mom had these tapes about food. I don't really remember much about them other then the theme song which went something like "Let's eat to live not live to eat" and then they had really disgusting recipes. Seriously? I am a true believer in not being a glutton, but I also believe that our food should taste good, as well as look good. We should be able to relish our food and it still can be healthy for us.
The recipes I share on here will probably not contain a lot of soy, since I am really not a fan. We do have the occasional "soy dog" or "soy burger" but these do not make up the bulk of our meals. I do make a meatloaf that uses a soy ground beef substitute, and tastes really good, but thats about it.
So the first recipe or rather recipes I am going to share are for vegetarian meatballs. They do have cheese and eggs in them, however I have used rice cheese in the first recipe and they taste pretty much the same.

Meatballs
1 Cup Italian Bread Crumbs
1/2 Cup Pecan Meal
2 Eggs
1 tsp onion powder
1 tsp garlic powder
1 Cup Shredded Mozzarella Cheese

Mix together and roll into 2 inch or so balls and fry in a bit of olive oil, or you can put them on a sprayed cookie sheet and bake for an hour

When they are done pour your favorite red sauce over them and pop them in the oven until dinner time. These are great as a side to pasta or on a hoagie roll as a sub.

Meatballs #2
1 Cup Pecan meal
1 Cup Bread crumbs
1/2 cup Cheddar cheese
1/2 cup Cottage Cheese
4 Eggs
1 tsp sage
Mix well and roll into small walnut size balls. Bake @ 350 for 20 min. Or until golden brown Serve in barbecue sauce.

Barbecue Sauce
2 Grape Jelly
1 Large Kraft Barbecue
Heat over med heat until mixture is smooth and warm.
