A little bit of everything burgers.

So I have a daughter who thinks that vegetables should only be in the form of French fries and ketchup. So getting her to eat her veggies can sometimes be a challenge (she will eat peas and carrots if they are covered in brown sugar and butter, she will also suck the butter off of broccoli-yes I am working on this.) So when I came across a burger recipe that had loads of healthy things in them, I thought why not give it a try!
The recipe itself goes together very easy-if your looking for something with a burger like texture this is not it. I am not sure how to change the texture, but am thinking about maybe adding some pecan meal next time I make these in hopes it will be a bit firmer, although the longer they cool the better the less mushy they are. I was a little concerned with the mixture not holding up through the baking process but they did and held together on a bun quite nicely. They are very filling and remind me of the black bean burgers by Morningstar. Lailah loved them and Xander actually would have rather just eaten his broccoli. The recipe is actually called "The Best of Everything Burger" but I made a few changes to make it my own.
If you don't own a food processor then this recipe is going to be hard to make.

Pre-heat your oven to 350
1/2 Cup Brown Rice
1 Cup water
Cook rice. I am actually thinking this would be a great re-use of brown rice. Since I didn't have any in my fridge I just cooked it, but really either would work.


2 cans black beans drained, rinsed, and set aside.
1 Bell pepper, I only had a yellow bell pepper so thats what I used, the recipe calls for one green bell pepper. I would quarter it.
1 Onion quartered
6 or so garlic cloves peeled
1/2 cup mushrooms, chopped. I only had medium portabello mushroom caps so I used those. (2 of them)
Put those ingredients in the food processor and blend until finely chopped. I actually walked away from the food processor for a second or so and had brown mush. But I think that worked better then finely chopped since I am not a fan of biting into a burger and an onion or mushroom or any vegetable. Once its the texture you like dump it in a bowl.
Dump your black beans into the processor and pulse a few times until they are kinda pasty/chunky. Add to your vegetable mix.
3/4 Cup mozzarella cheese. I just shredded what looked like to be 3/4 of a cup into the food processor.
Mix the cheese and rice in the processor. Mix everything together.
2 eggs
1 tbs. Chili Powder
1 Tbs. Cumin
1 tbs. garlic salt
Hot sauce to taste-I actually didn't use this since I didn't think the kids would be able to handle it.
Whisk the eggs and the seasonings together, and add to the bean mixture. Work together with your hands until everything is well mixed then add enough bread crumbs so that the mix is sticky and holds together.
I used a half-cup measuring cup to measure out the mix and patted it out into patty shape on a greased cookie sheet. The recipe made 10 large burgers and one mini burger.
Bake @ 350 for about 15 minutes then turn over and bake another 10 minutes. Or until they are brown on the bottom and top. Enjoy!
