Pot Pie
1 Cup diced potato
1 Cup Chopped Onions
1 Cup Diced Carrots
1 Cup Celery
1/4 Cup Peas
1/3 Cup Butter
1/2 All Purpose Flour
2 Cups Broth
1 Cup Milk, or 1 Cup Half and Half
1 tsp. Salt
1/4 Tsp. Pepper (I actually leave this out, and just add it to taste after it's done)
4 Cups Chicken, or Chicken Substitute. Or this can be optional.
Preheat Oven to 400. Saute Onion, Celery, Carrots, and potatoes in butter for 10 min. Add flour and mix well. Cook for one minute, stirring constantly.
Combine broth and milk-gradually stir into veg mixture. Cook over medium heat, stirring constantly until thickened. Stir in salt, pepper, peas, and chicken.
Pour into shallow 2 quart pan and top with biscuits. Cook for 40 or 50 minutes until vegetables are soft, and biscuits are golden brown. (I've had to put a top on the dish so that the vegetables could finish cooking)
You can also use a pie crust for this. Whatever your preference.
