Now my family isn't one of those families who won't eat broccoli. In fact they love it. Lailah and Xander down the stuff like it's candy. But I came across a recipe on a friends FB page that I just had to try! So here's the recipe. The verdict was Lailah loved it, Xander loved it, and Jason said he likes broccoli simply steamed with nothing on it. I however happily finished off the pan. (This is a recipe from Ina Garten's cook book Back to Basics)
2-3 Broccoli Crowns
4-6 Garlic Cloves sliced
Lemon Juice
1.5 tsp Salt
6 Tbs olive oil
1/2 tsp. black pepper
Parmesan Cheese (I used a fresh grated, I guess you could use the Kraft stuff, but I like fresh better.)
3 tbs. toasted Pine nuts (I didn't use this.)
Lemon
2 tbs fresh basil (I didn't have this)
Pre-heat oven to 425, chop up the broccoli, but leave it kind of large. Put on a pan toss with olive oil, salt and pepper. Add the sliced garlic, toss again. Put into oven. Cook for 20 to 25 min. I stirred it a bit, during the cooking, but I don't think you have too. Once the time is up, pull the broccoli out of the oven, toss with the lemon juice, parm. cheese, and pine nuts and basil. You can toss again with olive oil, but I found that unnecessary. It was sooo yummy!

Merrick hates broccoli, but Tirzah will eat it. I love it. I may have to try this.
